How We Do It

In keeping with the expertise of our third-generation family business, Bay Edge follows the Northern Italian artisan tradition of flat grinding.

Master grinders hand sharpen one edge at a time using the water-cooled grinding wheel method which prevents overheating while ensuring proper maintenance of the blade’s temper. Overheating blades causes corrosion and decarbonization (softening of the steel structure).

We then professionally buff and hone each blade to form a durable sharp edge. This technique enables our customer to maintain cutlery sharpness between servicing more effectively, using a steel.
